How often do you usually have to do this?

Usually about 2-3 shows a week. Mostly on Saturday, but sometimes on Thursday. That's when the main falconer usually takes off.

There's surprisingly few mentions for any Dragon Quest besides VIII

Dragon Quest is actually one of my favorite series. I feel that VIII was the pinnacle of the series, but I also like V a lot.

That's where we disagree, I value canon over practice. I disregard mistakes, and go with what the creators have laid down as official. However, given that it can be romanized either way, the way it was romanized in Japan at the release of FF7 was as Aerith, as in the instruction manual and accompanying materials.
